Green Beans Curry

Recipe:

 

– Green Beans – 1 lb

– Coconut powder – 1n1/2 tsp

– Onion – 1 medium sized

– Green Chillies – 3

– Curry Leaves – 6 or 8

– Cloves – 3

– Cumin seeds – 1 tsp

– Mustard seeds – 1 tsp

– Turmeric powder – 1 tsp

– Red chilli powder – 1 tsp

– Salt – 1n1/2 tsp or to taste

 

1. Wash the green beans thoroughly. Cut the ends and then chop them into 1/2 inch pieces. 

2. In a wide skillet/pan, heat about 2 to 3 tsps of oil (I prefer canola oil). Add cumin seeds, mustard seeds, cloves and curry leaves. Once they begin to splutter, add the chopped onions, green chillies and saute for a few minutes or until the onions are translucent or light brown.

3. Now, add the turmeric, red chilli powder, salt, coconut powder and saute for a couple of mins.

4. Then, add the chopped green beans and saute. Cover and let it cook for atleast 10  to 12 mins (checking every couple of mins) or until the beans are tender.

This is a perfect curry to go with rotis/chapathis.
